Shopping list:

1 big onion

1 lb of ground turkey or beef

1 16 oz can of enchilada sauce

1 can of baked beans

1 can or package of corn

1 box of yellow corn meal

1 can chopped green chiles

1 can sliced black olives

1 can low-fat condensed milk

1 2-cup bag of grated cheddar cheese

It's a mostly adlib typical guy recipe. Preheat oven to 425. I start by making the filling--a big onion, which I cook down almost to being carmelized, a pound of browned ground beef or turkey, a 16oz can of medium-hot enchilada sauce (next time it'll be hot), a can of Bush's Grillin' Beans, and a package of frozen corn. Spice it up with chile powder, etc, and set aside.

The crust is about 3 cups of yellow corn meal, a can of green chiles, a can of black olives, a can of low-fat condensed milk, and enough water (about 2.5 cups) to make it a batter. I simmered it over medium heat in a sauce pan for ten minutes or so, stirring so it didn't burn.

Then I put a floor of 1/3 of the batter in a baking dish and baked at 425 for about 10 minutes. I let it cool some, then poured in the filling, covered with the rest of the batter, and baked for 20 minutes.

Then I put on a bunch of shredded cheddar, baked it all for about 10 more minutes, and finished it with a few minutes under the broiler, watching carefully so it didn't burn. Next time I'll kick it up and make it hotter.
